So I have a love hate relationship with the fall season....mainly because I despise winter! I hate the cold, hate the snow, hate short days of sunlight, hate being cooped up inside all of the time, hate dressing in 700 layers, hate trying to decide whether or not to wear my coat into the mall only to overheat immediately and have to lug it around OR leave it in the car and freeeeeeeze my @$$ off running to and from the building. What to do what to do....
BUT I do love fall! I love camping, bonfires, pumpkins and HALLOWEEN! I always buy the Gooseberry Patch Cookbooks for autumn at this time of year and I got my 2011 one this week! So I thought I would share a couple of the autumn recipes we tried this week and LOVED!
Campfire Packets
4-6 red potatoes, sliced thin
1 red, green or yellow pepper, cut into thin strips
1 onion, sliced
2 T olive oil
2 T steak seasoning salt
1 T minced garlic
4 precooked turkey sausages, sliced thin
salt and pepper
Divide potatoes evenly among 4 sheets of foil that have been sprayed with nonstick spray. Top potatoes with pepper and onion and drizzle with oil. Sprinkle with seasoning, garlic, salt and pepper. Top with sausage slices. Wrap foil tightly to form a packet. Place over a campfire (on grate) or grill over medium heat on an outdoor grill. Cook for 14-18 minutes turning once. Serves 4.
These are SO EASY! I made the packets up beforehand and just put them in the fridge until we were ready to grill them. It was also a great way to use up the veggies from our CSA this week.
S'Mores Brownies
18.5 oz pkg of brownie mix
3 c. mini marshmallows
4 whole graham crackers, coarsely broken
2 chocolate candy bars
Prepare brownies as directed on package; baked in greased 13x9in pan. As soon as brownies are out of oven sprinkle with marshmallows and graham crackers. Set oven to broil. Broil for 30-60 seconds, until marshmallows are golden. Watch carefully...they brown quickly! Sprinkle with candy bar pieces. Let cool and cut into squares.
THESE ARE THE BEST BROWNIES EVER! Taste just like s'mores!!!!
